Chicken soup
Dice
1 small onion
2 large carrots
3-4 stalks celery
Add to a large pot over medium heat:
2 Tblsp light olive oil
Add onions and sautee for a few minutes stirring occasionally, then add carrots and celery and continue to cook and stir for about five minutes.
Add to pot:
1 thick slice of ginger
Mince:
2 cloves garlic
add garlic to pot and stir
Add
2 quarts homemade chicken stock unsalted
2-3 tsp salt
1/2 tsp black pepper
Bring to boil, then simmer for 5 minutes
Add:
1 cup egg noodles
Simmer for five minutes
Add:
1 1/2 cups chopped chicken
Simmer about 8 minutes--longer if noodles are not yet tender.
Add:
2 cups baby greens--spinach, kale, etc
Serve!
This is where I keep my recipes for a scrumptiously healthy life. Romantically, I imagine it as a place where future grandchildren will look up family recipes. In the meantime, it's a place I can go to remember how to make that thing I made.

Mango macs
Mango macadamia nut cookies!

Mango Macs
1 cup coconut oil
1 cup brown sugar
3/4 cup sugar
2 large eggs
1 tsp almond extract
2 tsps vanilla extract
3 cups flour
1 tsp baking soda
1 tsp salt
1 cup chopped dried mango pieces
1 cup chopped macadamias
Set oven to 350.
Gently boil the dried mango pieces in just enough orange juice or water to soften them up. 5-10 mins till liquid is almost gone, then let cool.
Cream coconut oil and sugars together till fluffy. Add eggs and extracts.
Combine dry ingredients and gradually stir into wet mixture.
Add mango pieces and macadamias.
Freeze dough in 2-3 inch cylinders wrapped in foil or parchment
Once frozen, unwrap and slice into 1/4 rounds and bake cookies for 10-12 mins at 350.
