Baie Bébé on a Snow Day

Baie Bébé 

"Berry Baby" in French (named by Birdie) but it's really a Dutch baby with berries! 

Preheat oven at 375 F  

Add 1/4 cup of butter to 9x9 Pyrex dish or similar and let melt in oven while it preheats

Combine in Blender:

 4 eggs 
1/2 cup of flour plus a tablespoon 
3/4 cups milk or half and half
1-2 tablespoons sugar 
Grating of nutmeg 

Pour batter into hot pan and sprinkle with  

1/2-1 cup frozen or fresh berries  berries (two types are nice for color)  

return to oven lowering temp to 350 

Bake for 30 mins  

Serve immediately with powdered sugar for a snowy dusting :) Other garnish could be lemon wedges, and maple or berry syrup.  Great for a snow day!

The Green Juice

1 apple

5-6 celery stalks

1 cup packed parsley with stems

1 Tblsp lime juice

2 inches peeled ginger (optional)

1 cup apple juice (or pineapple, or lemonade)

1 cup ice

Blend it all in the vitamix on smoothie/snowflake setting.

Fall of Summer Roman chicken

Preheat oven to 425

potatoes
carrots
zucchinni
red onion
cherry tomatoes

balsamic
fresh oregano rosemary and thyme, mint and basil
olive oil

Put 1/2 cup balsamic in a saucepan on low heat, add chopped oregano, rosemary and thyme

On a large sheet pan, spread out potatoes and carrots, and anything else starchy cut to 1 inch pieces and drizzle w olive oil and sprinkle with salt

Put in oven while pounding chicken breasts to an even thickness... about an inch

Cut red onion to 1 inch pieces, halve cherry tomatoes, and add to pan, along with chicken. 

Salt and drizzle with olive oil and herbed balsamic reduction. Return pan to oven for 15-20 mins or till chicken is cooked.

Chiffon and add mint and basil before serving

Rhubarb crisp





  • Rhubarb Crisp

  • 2½ - 3pounds rhubarb, trimmed, tough strings removed, and cut into 1½-inch pieces (about 5 to 6 cups)
  • ¼-1/2cup white sugar
  • 1 Tblsp lemon juice
  • 1lemon zest

Crumble:

  • ¾cup brown sugar
  • ½cup all-purpose flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • ½cup rolled oats
  • ½cup pecans
  • 6 Tblspmelted butter, plus more for greasing pan
Bake for 30-35mins at 375 degrees F.

Serve with vanilla ice cream.

Peach Berry Pavlova


Set oven to 350 F and prepare a sheet pan with parchment

4 large egg whites
1/2 cup sugar
1 tsp champagne or other white vinegar
1/2 teaspoon vanilla
2 teaspoons cornstarch

Whipped cream
1 1/2 cups heat cream
1/4 cup sifted  powdered sugar

1-2  diced peaches
1 cup blueberries
1 cup raspberries

Whip egg whites in clean bowl at medium high speed for one minute till foamy with soft peaks. Continue to whip while adding sugar gently, one spoonful at a time until sugar is dissolved.  Continue to whip for 8-10 minutes till you have a luscious, glossy meringue with stiff peaks.  Gently fold in vanilla and vinegar. Then sift and gently fold in cornstarch.  Pipe into about 12 mini nests, 3 inches in diameter or make one large pavlova nest on baking sheet. Put into oven and reduce heat to 300 F.  Bake for 30 minutes, or until just beginning to brown--still a creamy color. Then, without opening the oven, turn off the heat and leave pavlova in the oven for 30 more minutes.  Store pavlova in cooled oven till ready to serve.

Fill with whipped cream and top with diced peaches, blueberries, and raspberries.

Key Lime pie


Recipe for two 9" (smallish) pies

Set oven to 350

Make crust

One box of graham crackers, crushed or blended to a fine crumb, some bigger pieces ok (cinnamon grahams can be a good option here)
6 Tablespoons light brown sugar
1 tsp salt
1stick butter, melted

Mi all crust ingredients together and press evenly up sides and into base of pie pans
Bake at 350 for 10 mins

Make filling

Warm and/or squeeze limes after zesting and before squeezing to get more juice
2 Tablespoons lime zest 
1-11/2 cups lime juice, add water to make it to 11/2 cups if you aren't getting enough juice
2 14 oz cans sweetened condensed milk
6-8 egg yolks

Mix all filling ingredients together(you can increase your work and potential fluffiness of filling if desired by whipping egg yolks and then whipping whipped egg yolks with the condensed milk, then folding in lime juice and zest), 
pour into crusts and bake for 10-15 mins at 350, till just slightly jiggly in middle, but not brown at all. Cool completely and refrigerate. I like to freeze one for later—just take out of freezer for a few hours before serving.

Top with whipped cream and a little more lime zest to serve.

Favorite oatmeal cookies

In a large bowl soften/melt:
1 cup (2 sticks) butter

Mix in:
3 Tbsp coconut oil
2 eggs
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp grated nutmeg
1 tsp cinnamon

Mix in:
11/2 cups whole wheat flour
11/2 tsp kosher salt
31/2 cups rolled oats
1/2 cup raisins optional
1 cup walnuts optional

Bake at 400 for 12 mins till crisp at edges but just baked and still soft in middle.
